Stuffed Acorn Squash

One of my families all time favorites.  Can be adapted to make vegan.  Also you can make your own cream of chicken soup if you are making everything from scratch.  

Stuffed Acorn Squash

Ingredients
  

  • 2 Acorn Squash cut in half
  • 1 lb ground turkey
  • 1/2 lb turkey sausage
  • 1/3 c chopped onion
  • 2 tbsp chopped herbs sage, thyme, oregano, parsley any combo
  • 2 cloves minced garlic
  • 1 can cram of chicken soup
  • 1/2 c panko bread crumbs
  • 1/2 c Italian bread crumbs
  • 1/4 c chopped pecans

Instructions
 

  • Brush squash with butter and place cut side down in a baking dish.
    Bake at 400 for 35 minutes
  • Saute onion, turkey, sausage, and herbs in olive oil until cooked through.
  • add soup and 1/2 of the panko and italian breadcrubs
  • Fill cooked squash halves with turkey mix.
    Top with left over breadcrumbs and pecans
  • bake an additional 20 minutes
