Summer Grilled Veggie Ratatouille

Yum! All and any summer vegetables and herbs, grilled and then savored.  Fresh bread is the best with this!

Summer Veggy Grilled Ratatouille

Ingredients
  

  • 1 large eggplant or 2 small. diced
  • 2 medium summer squash sliced
  • 1 red bell pepper large diced
  • 8 oz mushrooms sliced
  • 2 medium roma tomatoes roughly chopped
  • 1 tbsp fresh chopped rosemary
  • 1 tbsp fresh chopped oregano
  • 1 tbsp fresh chopped basil
  • 4 tbsp olive oil
  • 4 tbsp grated fresh parmesan cheese

Instructions
 

  • chop all veggies
  • Combine all the vegetables, herbs, and olive oil in a bowl and toss to combine
  • place in foil packs (don't over pack, create a new one to fit all thee vegetables
  • close up foil packs and place on grill for 30 minutes, turning every 10 minutes or so
  • This can be served over pasta or rice or just by itself
  • sprinkle finished, hot ratatouille with parmesan cheese.
