Yum! All and any summer vegetables and herbs, grilled and then savored. Fresh bread is the best with this!
Summer Veggy Grilled Ratatouille

Ingredients
- 1 large eggplant or 2 small. diced
- 2 medium summer squash sliced
- 1 red bell pepper large diced
- 8 oz mushrooms sliced
- 2 medium roma tomatoes roughly chopped
- 1 tbsp fresh chopped rosemary
- 1 tbsp fresh chopped oregano
- 1 tbsp fresh chopped basil
- 4 tbsp olive oil
- 4 tbsp grated fresh parmesan cheese
Instructions
- chop all veggies
- Combine all the vegetables, herbs, and olive oil in a bowl and toss to combine
- place in foil packs (don't over pack, create a new one to fit all thee vegetables
- close up foil packs and place on grill for 30 minutes, turning every 10 minutes or so
- This can be served over pasta or rice or just by itself
- sprinkle finished, hot ratatouille with parmesan cheese.
