Cranberry Blueberry Healing Jam

You might not be in charge of the cranberry sauce for Thanksgiving, but this “jam” is worth a try for the amazing taste and the healing properties all during the winter.

Adding in the elderberries and spices add a dimension of flavor but also tons of health benefits.  As if  cranberries and blueberries didn’t have enough on their own.

When people think of cranberries they often think of that awful stuff they call sauce.  A jelled blob of tart and sugar.  This has all the wonderful flavors that you have come to look forward to  at Thanksgiving but in a much more nutritious way.    Also it is amazing on top of cheese cake. 

Cranberry and Blueberry Healing "Jam"

You might not be in charge of the cranberry sauce for Thanksgiving, but this "jam" is worth a try for the amazing taste and the healing properties all during the winter.

Ingredients
  

  • 1 bag cranberries (mine were frozen)
  • 2 c blueberries (again mine were frozen)
  • 2 tsp monkfruit sugar
  • 2 tbsp honey
  • 3 whole star anise
  • 2 whole cardamom pods
  • 2 whole cinnamon sticks
  • 2 tbls backstrap molasses
  • 2 tbls dried elderberries

Instructions
 

  • Place the elderberries and spices in a tea ball or bag
  • Put everything, including the tea ball into a sauce pan and add just enough water to cover the bottom of the pan by about a 1/2 inch
  • Bring to a boil and then turn down heat to low and leave on a simmer
  • Make sure all the spices are in liquid to extract all their goodness
  • Simmer until all the cranberries have "popped", or broke free from their skin. Stirring occasionally and checking to make sure that there is enough liquid in the pan
  • At this point the "jelly " should be nice and saucy.
  • Simmer for 10 more minutes on low and then remove from heat
  • Let the jelly sit and cool with all the spices and elderberries in it to get as much from them as possible
  • Once cool, remove spices and tea ball of elderberries. Stir once more to incorporate all the berries and juices.
  • Store in the fridge in a jar for up to two weeks
  • You can add more sweetener if you like but I really like the tartness of the cranberries to shine through
