Cauliflower Apple Curry Soup

This is another great soup recipe that everyone LOVES!!! It has the rich curry flavor and the contrast of the tart apple is just perfect. It is very easy to make vegan/vegetarian by using vegetable broth in place of the chicken broth. Get a great dose of cauliflower and savory apples. Add some hearty whole grain bread and you have such a satisfying meal!

Ingredients
  

  • head Cauliflower
  • 2 Tbsp Olive oil
  • 1 Leek (just the very top of the green part removed)
  • 4 Tbsp Curry powder
  • 3 diced Large tart apple skin on
  • 4 cups Chicken broth
  • 1 can Whole unsweetened coconut milk
  • Salt to taste

Instructions
 

  • Coarsely chop up cauliflower and roast in a 425° oven on sheet pan for 30 minutes or until slightly browned
  • While cauliflower is roasting, dice 2 apples with their skin on and 1 leek using all but the top most green part. Because this soup is pureed at the end you do not need to be exact in you dicing size.
  • In a large stock pot, heat olive oil over med/high heat. Add apples and leeks and sauté for 10 minutes or until soft. Add curry powder and stir in and toast for 2 or three minutes until incorporated with the oil.
  • Add chicken broth and let it simmer on low until the cauliflower is done roasting.
  • Add the cauliflower to stock pot and continue to simmer for 1 hour more
  • Remove from heat once all vegetables are soft and add coconut milk
  • Puree all to a smooth consistency with an immersion blender.
  • Top with a handful of the diced apples and you are ready to go!
